Our Teachers in Oaxaca
Ten years and many culinary tours to Oaxaca have convinced us that taking small groups (7 to 9 people) and working with native Mexican teachers is the best way to experience and appreciate Oaxacan cuisine. For 2006 we offer to you the following teachers:
Nora Gutierrez
Nora is a native of Oaxaca and co-owner with her husband William of Mis Recuerdos Bed and Breakfast. She learned her culinary skills from her mother and grandmother who is now 86 years old. Her classes are informal, with partial participation, and utilize traditional Oaxacan ingredients to prepare her grandmother's recipes. Nora is a natural teacher whose enthusiasm for her culinary heritage and personal warmth make her classes an unforgettable experience. Nora¹s stories of her grandmother, whose life has spanned the history of modern Oaxaca, add to the experience.
Natalia
Natalia, a Zapotec from the valley of Oaxaca, will demonstrate the preparation of the "energy drink" tejate. She will also prepare fresh lemonade made from lemon leaves ground on the metate. She makes it look easy, you can give it a try.
Victor
Victor, a Zapotec from the Sierra Juarez Mountains, will show us how he works the dough and prepares the most delicious bread in a truly rustic wood fired brick oven. You will be able to roll your own dough.
The Martinez family
The Martinez family, from the Zapotec village of Teotitlan, will invite us into their home for barbecue, empanadas, fresh tortillas and beans with herbs. The barbecued lamb is prepared with chile paste, covered with avocado leaves and pit cooked in their yard. Students will be able to prepare their own empanadas and tortillas on the comal. The meal promises to be a true taste sensation.
Susan Baldassano
Susan Baldassano, founder of To Grandmother's House We Go Cooking Tours, has led culinary and cultural tours to Oaxaca since 1994. Her knowledge of Oaxaca¹s cuisine and her 15 years experience teaching at the Natural Gourmet Cookery School in New York adds something special to our cooking classes. The emphasis of her Oaxaca cooking tour is traditional home style food, working with local cooks, emphasizing local, seasonal ingredients. Susan will be available to answer your cooking questions. Every morning on the tour Susan visits one of the local markets, shopping for the chiles and herbs that create the special flavors of Oaxacan cuisine. You are welcome to join her.
